This course provides hands-on learning in the classroom, greenhouse, shop, and throughout the Warwick Valley community and New York State. Through experiences such as raising animals, making maple syrup, exploring woodlands, creating floral arrangements, and experimenting with new food-industry technologies in farm to table food labs, you will develop as a Critical Thinker and Creative Innovator who learns by doing.

Working with peers, local professionals, and community partners strengthens your communication and collaboration skills while helping you understand how agriculture, land use, and food systems impact communities. Fieldwork encourages you to act as a responsible and ethical global citizen, recognizing the relationship between people, the environment, and sustainable resource use. You will explore career pathways while building the adaptability and curiosity of a lifelong learner.

In this course, you will explore the landscape industry from concept to completion, developing the skills of a Creative Problem-Solver and Critical Thinker. You will study plant selection, design principles, drawing techniques, and technology applications while practicing safe and effective equipment use in the shop and field.

Field projects and community design experiences allow you to collaborate with peers and engage with diverse perspectives, strengthening your role as a Culturally Responsive and Community-Minded Learner. You will practice clear communication, adapt to new tools and techniques, and create designs that promote environmental responsibility and community well-being — key qualities of an ethical and global citizen.

Open to 10th grade and above
If you are mechanically inclined, enjoy tearing down, and rebuilding engines and equipment, this course is for you. You will learn the basics of tool and engine operation, maintenance, and overhaul through hands-on laboratory experiences. You will also gain experience in welding and working with larger equipment including tractors.

You will have the opportunity to learn the repair and maintenance of conservation and landscaping equipment. You will also be involved in all aspects of machine shop repair including welding, use of micrometers, and replacement of engine components. You are encouraged to work on individual projects, such as working independently on the repair of lawn mowers, and other available equipment with guidance from the instructor.

Floral Design allows you to express creativity through hands-on artistic work while building skills in a growing industry. You will design arrangements, bouquets, corsages, wreaths, terrariums, bonsai, and other plant-based art forms, strengthening your identity as a Creative and Innovative Thinker who brings ideas to life with purpose and care.

Visits to local florists and engagement with community partners help you become a confident communicator and culturally responsive learner, appreciating the global traditions, meanings, and aesthetics of floral art. As you design collaboratively and adapt to new techniques, you will develop the flexibility, curiosity, and interpersonal skills essential for a lifelong learner.

Prerequisite: Living Environment Regents
This course introduces you to the world of domestic and exotic animals through hands-on work and scientific study. By exploring anatomy, nutrition, health, reproduction, and aquaculture, you will strengthen your ability to think critically and ethically about animal care and the responsibilities connected to it.
Collaborative labs, field experiences, and problem-based activities refine your communication, teamwork, and scientific reasoning skills, all central components of the Portrait of a Graduate. You will also explore careers in animal science and consider your role as a responsible global citizen who understands the relationship between animals, people, and the environment.

Prerequisite: Pass Animal Science and Living Environment/Biology
Veterinary Science 1 blends classroom instruction with hands-on practice to prepare you for careers in animal health. You will study anatomy and physiology, nutrition, behavior, medical terminology, lab procedures, ethics, and animal welfare, developing the habits of a critical thinker and ethical decision-maker.
Hands-on labs strengthen your communication, collaboration, and scientific problem-solving skills as you work carefully and responsibly with animals.
